Edible Cookie Dough Bonbons - Paleo Diet Style

These blissful bonbons consist of chilled Paleo cookie dough coated in chocolate. Because no eggs are used in the recipe, the dough is safe to eat raw. Dig in without guilt!
 
Serves: 4–8
Prep time: 15 minutes (plus at least an hour to chill)
Cook time: 5 minutes
 
Ingredients:
1 1/2 cups blanched almond flour
3 tablespoons coconut flour, sifted
1/4 cup honey
1 teaspoon vanilla extract
2 1/2 tablespoons coconut oil
1 cup mini dark chocolate chips*
Parchment paper
4 ounces semi-sweet baking chocolate
1/4 teaspoon sea salt
 
* Most chocolate contains soy lecithin as well as dairy. To avoid these ingredients, a good brand to use is Enjoy Life.

Step 1

In a large bowl, mix together the almond flour, coconut flour, honey, vanilla extract and coconut oil. When the ingredients are fully combined, stir in the chocolate chips.

Step 2

Line a dish with parchment paper, and roll the cookie dough mixture into 1-inch balls. Place the balls on the dish, and cover them with plastic wrap. Freeze the balls for at least 1 hour or overnight.

Step 3

Chop the baking chocolate, and place it in a microwave-safe bowl. Microwave it for 20 seconds, stir, and microwave it for another 10 seconds or until the chocolate is completely melted.

Step 4

Roll the frozen cookie dough balls in the melted chocolate until coated. Place the chocolate-coated balls back on the parchment paper, and refrigerate them for 15 minutes before serving.
