When I was in college, I took a summer job at The Olive Garden. I took advantage of the half-off discount for meals ordered on my lunch break and tried most everything on the menu. But I returned to my favorites, namely the Zuppa Toscana. A hearty soup made with Italian sausage, kale, potatoes and bacon, the soup recipe is still a favorite of mine. In honor of January being National Soup Month, I've decided to make this recipe at home. I might even try it out as a crockpot recipe, since the broth becomes more flavorful the longer it cooks.
