which explores traditional pie recipes like banana and chocolate
cream. An interview with professional baker Paula Haney of Chicago-based Hoosier Mama Pie Shop reveals that many old-fashioned pies are becoming
lost, often due to the stigma of tricky crusts and finicky fillings. But the perfect pie still exists, and as says Haney should "just fill up your mouth with flavor. You hit salty and sweet
and bitter."
