As a child, I loved going to my school's Pumpkin Patch. There was a hay maze, a "scary" haunted house, games with plastic eyeball rings as prizes and a field full of pumpkins. We used to stagger home under the weight of two or three pumpkins. Mom would carve them, roast the seeds, but we never ate the flesh. Apparently, I've been missing out for years. Tonight, I'm taking my little sugar pumpkin, roasting it and making these savory pumpkin pancakes. Crepe-like in texture, they can be rolled and stuffed with spinach, salmon and ricotta for a savory option, or ricotta with agave and pumpkin pie spices for sweet. Either way, they are sure to please both kids and adults alike.
